Okay…I have always wanted a bike. Yeah…I did it.

Today

8:00 am took Motorcycle knowledge test (passed)

12:30 pm Bought a bike (Thanks Rich)

1:00 pm Got Insurance

5:00 pm After work – Priceless!

So Dave Ryding makes this Cheesecake all the time and I needed a sure win for the bake off at Logic. First Place baby! Yahooooooo! I got no sleep making it too!

cheesecakeWith a yummy gingersnap cookie crust, this creamy pumpkin cheesecake is just what you need to wow your dinner guests during the autumn season. Prep: 29 min., Cook: 1 hr., 35 min., Other: 9 hrs.

Ingredients

12 crisp gingersnaps
1 cup all-purpose flour
2/3 cup chopped pecans
1/3 cup firmly packed light brown sugar
1/2 cup butter, softened
4 (8-ounce) packages cream cheese, softened
1 2/3 cups granulated sugar
4 large eggs
1 cup canned unsweetened pumpkin
8 tablespoons whipping cream, divided
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
3 tablespoons caramel topping

Mexican Enchilada Soup

Dave Ryding and I made this last night and boy was it good.

Chopped cooked chicken, canned beans, and tomatoes with green chilies are combined with rice and seasonings in chicken broth and enchilada sauce.

Ingredients:
    • 2 Tbsp olive oil
    • 1 medium onion
    • 1 Tbsp minced garlic
    • One rotisserie chicken from cub or walmart, pulled apart or chopped
    • 2 Tbsp chili powder
    • Dash ground red pepper (Optional)
    • 1/2 cup rice
    • 1 can tomatoes & green chilies (10 oz) or 2 big tomatoes and one hot pepper
    • 1 can black beans
    • 1 can white beans
    • 2 can green enchilada sauce or one big can
    • 2 can chicken broth (14 oz)
    • a little water ½ cup
    • 1/2 cup fresh cilantro
    • 1 tbsp lime juice

Method

Chopped cooked chicken, canned beans, and tomatoes with green chilies are combined with rice and seasonings in chicken broth and enchilada sauce.

Put oil in Dutch oven, add garlic and onion and stir until onion is soft. Add chicken and dry spices. Then add all other ingredients except cilantro and lime juice. Let come to a boil, add cilantro and lime juice, turn heat to medium and cook for 20 minutes.
Notes: This is great served on tortilla chips or with cornbread, topped with a scoop of sour cream. It freezes well. You can also substitute black beans for pinto and/or white beans.
